Dunkertons are essentially sophisticated farmhouse ciders,
combining the best of Herefordshire's cider making tradition with
an understanding of the needs of the late 20th century; no chemical
spray touches the fruit that we press and no colourings or flavourings
are added.
All our ciders and perry are made to Soil Association Standard, a symbol of
organic quality.
The juice of the apple can be converted to cider of a sort, but high quality
ciders with depth of character and flavour are made only from cider apples which
contain varying degrees of acids and tannins; Foxwhelp is an excellent example
of a sharp (acid) variety, Knotted Kernal is a bittersweet i.e. high in tannin
and sugar.
Searching for interesting ciders has led Dunkertons to produce three single
apple varieties which make delicious ciders in themselves: Breakwells Seedling,
Court Royal and the now rare Kingston Black, considered the greatest of all cider
apples. However their main production will be individually blended ciders; varieties
are fermented separately and then blended throughout the year in 2000-gallon vats.
At the time of writing, the blended cider available in litre bottles contains:
Foxwhelp, Brown Snout, Yarlington Mill, Strawberry Norman, Tremletts Bitter, Frequin
and Rol de Pommme.
